Gypsy Javas, is it a coffee shop, a bakery or a cafe?
How about all three!
Gypsy Javas is a small, cozy, local hangout with high ceilings and a great ambiance. Breakfast and lunch are served all day. Rotating pastries are baked in-house daily. Coda Coffee provides our premium coffee and espresso beans.
In 2019, Gypsy Javas became a reality for me, along with my twin sons, Brayden and Landen. We chose Pueblo because of family, the city's small-town "feel," culture and art scene.
I am a native Coloradan, graduate of the Culinary School of the Rockies and 15 years of professional experience in the hospitality industry.
Gypsy Javas stellar customer service, impeccable cleanliness,
